Chocolate Cake
 
2 c. flour
2 c. sugar
.5 t. salt
1 t. baking soda
2 eggs
 

.5 c. yogurt (or buttermilk or sour
cream)
4 oz baking chocolate or 5 T. coco
1 c. milk
1c. melted butter
 
 

Mix together dry ingredents. Beat in everything else except the eggs. For a fluffy cake, fold in the eggs. For a dense cake, beat in the eggs. Bake at 350 for about 30 minutes.

 

Cream Cheese Frosting
 

16 oz cream cheese
2 T. melted butter
2 t. vanilla
 

1-2 T. milk
~2.5 c. powdered sugar
(chocolate to taste)
 

Beat until creamy & alter amounts of milk & sugar until you reach the desired consistancy.

 

Pumpkin Cheesecake
 

3 pkgs. cream cheese
1 c. sugar
.25 c. brown sugar
2 eggs
1.75 c. pumpkin
.66 c. evap. milk
 

2 T. cornstarch
1 T. cinnamon
1 t. nutmeg
1 t. allspice
.5 t. ginger
 

Beat cream cheese, sugar & brown sugar until fluffy. Beat in eggs, pumpkin, & evap. milk. Add remainder & beat well. Pour onto crust. Bake at 350 for 1 hour or until edge is set & center moves slightly, turn off oven, & let it cool inside. Chill.

 

Chocolate Cheesecake
 

3 pkgs. cream cheese
.5 c. sugar
4 eggs
4 oz. chocolate
 

2 T. flour
.25 c. milk
2 t. vanilla
dash of salt
 

Beat cream cheese & sugar until fluffy. Beat in eggs & milk. Add remainder & beat well. Pour onto crust. Bake at 325 for 1 hour or until edge is set & center moves slightly, turn off oven, & let it cool inside. Chill.

 

Cheesecake Crust
 

1.5 c. graham cracker crumbs
.33 c. melted butter
 

.25 c. sugar
 
 

Mix & press into the bottom of a spring form pan.
