Apple & Walnut Salad
 

1/2 c. cranberries
1 T. sugar
1/3 c. balsamic vinegar
1/2 c. minced onion
1 T. dijon mustard

1 c. oil
salt & pepper
2 apples
mixed greens
1 c. chopped walnuts
 

Boil the cranberries for 5 min in 1/2 c. water and the sugar and let cool. Blend cranberry sauce, vinegar, onion, mustard, salt, & pepper in a food processor, then slowly add oil Toast walnuts on a cookie sheet for apx. 10 min in an oven set at 250. Toss on mixed greens salad with chopped apples and toasted walnuts

 

Tsatziki
 

1 c. plain yogurt
1 large cucumber

2 T. lemon juice
salt & pepper
 

1. peel cucumber and scoop out the seeds, then finely mince
2. combine ingredients and chill for at least 2 hrs

 

Shrimp & Tomato Salad Topping
 

lettuce
garlic
onion
dried tomatoes
shrimp

lemon juice
salt & pepper
olive oil
balsalmic vinigar

 

Mince onion and saute until clear, add salt, pepper, pressed garlic & tender dried tomatoes until soft, add chopped shrimp until cooked/warm. Toss with balsalmic & oil & serve over lettuce.

 

Tomato Pasta Salad
 

Box Penne
pkg. cherry tomatoes
can black olives
1 lb shrimp, cooked
fresh basil

fresh mozerella or parmisian
olive oil
basalmic vinigar
lemon juice
salt
 

Boil basta, toss with chopped shrimp, tom, olives, & rest to taste.

 

Fruit Salad
 

1 c. plain yogurt
1 c. crushed walnuts
1 apple, chopped
1 c. grapes, chopped
2 bananas, sliced
 

1 pear, chopped
1/4 c. golden raisins
2 T. brandy
1/4 c. fine sugar
 
 

Combine & Serve.
