| 1/2 c. cranberries |
1 c. oil |
| Boil the cranberries for 5 min in 1/2 c. water and the sugar and let cool. Blend cranberry sauce, vinegar, onion, mustard, salt, & pepper in a food processor, then slowly add oil Toast walnuts on a cookie sheet for apx. 10 min in an oven set at 250. Toss on mixed greens salad with chopped apples and toasted walnuts | |

2 T. lemon juice |
1. peel cucumber and scoop out the seeds, then finely mince |

| Shrimp & Tomato Salad Topping |

Mince onion and saute until clear, add salt, pepper, pressed garlic & tender dried tomatoes until soft, add chopped shrimp until cooked/warm. Toss with balsalmic & oil & serve over lettuce. |
